Mashed Kohlrabi with Brown Butter

Le chou-rave, vous connaissez? Il me faisait de l’oeil au supermarché la semaine dernière, un légume de saison, mais je n’avais aucune idée de comment le préparer et de surtout le faire aimer à mes 3 petits monstres. Cette préparation en purée a conquis tout le monde. Je l’ai réalisée sans pommes de terre mais rien ne vous empêche d’en rajouter quelques-unes.

4 Servings 

Unsalted butter (6 Tbsp.) – crushed Hazelnuts (⅓ cup) – Thyme sprigs (4) – Peeled Kohlrabi cut into pieces (5) – Heavy cream (⅓ cup) – Salt & Pepper.

1. Place the Kohlrabi in a large pot and pour in cold water. Season with salt and bring to a boil. Reduce heat and cook until the Kohlrabi are tender.

2. Meanwhile, heat the butter in a small pan over medium heat. Add the hazelnuts and the thyme sprigs. Cook it for 10-12 minutes.

3. Once the Kohlrabi are cooked, drain and made them once back in the pan.

4. Heat the heavy cream in a small saucepan over medium until warm.

5. Once the Kohlrabi are mashed, add the butter and the cream. Add salt & pepper.
