Do you like pizza? I guess so. Who does not like it! But we all knows they are not very healthy. Quinoa crust is a healthy option to still eat pizza without feeling guilty. I must say I was curious when I red the recipe on Delicously’s Ella’s blog. But it has been tested and approved by the whole family. The kids loved it. Plan 1 day ahead as the quinoa needs to soak overnight in water.
For 1 pizza (serves 4)
For the crust:
Quinoa (1 ½ cup) – Apple cider vinegar (2 tsp.) – Mixed herbs like basil, parsley,… (a handful) – chili flakes ( a pinch) – Salt
For the topping: use your creativity but I used in this recipe:
Mozzarella cheese sliced () – Prosciutto crudo thinly sliced (6-8 slices) – Tomatoes sliced (2) – Dry fresh herbs (Thym, basil, origan) (2-3 tsp.) – Chili flakes (a pinch) – Arugula ( a handful)
1. Soak the quinoa in water overnight.
2. Next day, drain the water in the quinoa and mixed all the ingredients for the crust together in a blender. Blend for a few minutes. Depending on how much herbs you put in, the color might be greenish.
3. Pour the mix in a baking pan (use parchment paper so it is not sticky), and bake it for 15-20 minutes in the oven (180°C).
4. Add you toppings (except the arugula) and bake/grill it for another 5-10 minutes. Add the arugula just before serving. Enjoy!
